ZheJiang Cuisine, also known as Zhe Cuisine, has roots from the Zhejiang Province. It is near Shanghai and centered in Hangzhou. Generally, this cuisine does not have much oil, and is light and fresh. I have eaten this cuisine many times, and it is one of my favorite foods to eat when I go to Shanghai. ZheJiang Cuisine has three main styles: Hangzhou, Shaoxing, and NingBo.
HANGZHOU
The Hangzhou variation uses rich characteristics and different bamboo shoots.
SHAOXING
The Shaoxing style uses freshwater fish and poultry.
NINGBO
The Ningbo style is salty and based on saltwater fish, seafood, with importance on the freshness.
Famous Dishes
Some famous foods from ZheJiang Cuisine are the DongPo pork, which is pork belly cooked in wine and soysauce, and West Lake Fish in vinegar, which is a fried fish that is served in slightly sour syrup.
In conclusion, the ZheJiang cuisine focuses mainly on fresh and light, although the Ningbo style may be bit salty. I think this cuisine is delicious, and you should try it too. It truly is a special food of China.
